Apple Squares – Easier than Pie

Apple Squares - Easier than Pie

These Apple Squares from AllRecipes.com are Fall comfort food at its very best – and they won’t break the calorie bank. A square is only 119 calories, 3.3 g of fat. Did I mention they taste just like apple pie?

They’re simple to make, and delicious. I have two cautions, though. Cut the topping ingredients in half – mine ended up with a lot of loose cinnamon/sugar. And if you’re not the only one who’s going to enjoy these, make a double batch. They won’t last long!

Ganache's Dirty Little Secret - It's Easy!

Ganache sounds very uptown and proper, but I’ll let you in on a little secret. It’s actually very easy. It gets around. You know what I’m saying…

Well what I’m really saying is, it’s two ingredients cooked together and that’s it. Just measure precisely, and handle according to instructions and your small effort will be rewarded richly with this glossy chocolate perfection. Give it a try, you know you want it. Blueberry Cornmeal Muffins

Blueberry Cornmeal Muffins

I never would have thought of putting blueberries in corn muffins. But I have to say these are really good. The blueberries add a little sweetness and make the muffins really moist.

Try these with a little butter – if you like blueberries and corn muffins, they’re worth a try. From AllRecipes.com: allrecipes.com/recipe/blueberry-cornmeal-muffins-2/detail…

Spring Cleaning

So it’s Spring, and I’m 40.  I haven’t even thought about Weight Watchers for months, though I do keep paying them because I keep thinking somehow it’ll work without me doing anything.  Sadly for my waist, this isn’t the case.

Last month, my mom had a heart attack.  I’ve often repeated the axiom that first God whispers in your ear, then he taps you on the shoulder, then he hits you with a brick; don’t wait for a brick.  Well, for my mom this was a brick and for me it was a hard tap on the shoulder.  Time to get my act together.
